School is starting again soon for our household and with it the joy /not/ of packing lunches that the kids will actually eat. It’s a struggle. If the kids had their way they would like nothing more than a candy bar and chips for lunch. Since that is not about to happen, looking for recipes that are healthy and fun is one of the first things to think about before school actually starts, at least in our household. There is always the option of school-provided lunches, but the novelty of waiting in line lost its appeal long ago.
Vegan Lunch Box by Jennifer McCann gives simple ideas and recipes, and are for any kid whether vegan or not. I have three kids and each has different tastes. One prefers veggies while another prefers meat-only. I provided the recipe for the Tofu Fish Sticks on my review for the book, and just having this as a resource for ideas for menu planning has been great.
If you’ve got nothing but pantry staples and a couple of slices of plain bread, McCann provides real-world strategies for busy parents to provide healthy lunch box ideas for kids. Introducing them early to new foods and foods that are healthier makes it all that much easier to set them on a path for healthy eating when they are older.
